Ingredients

4 large ears of fresh corn

1/4 cup vegetable oil

2 tablespoons Cajun seasoning

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust to taste)

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup grated Parmesan cheese (optional for extra flavor)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prepare the Corn: Start by removing the husks and silk from the corn. Using a sharp knife, slice each ear of corn lengthwise into quarters, creating “riblets.” Ensure you cut cleanly to avoid splinters.

Make the Cajun Seasoning Mix: In a small bowl, combine the Cajun seasoning, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well to ensure even distribution.

Coat the Corn Riblets: Brush each corn riblet generously with vegetable oil. Sprinkle the seasoning mix evenly over the riblets, using your hands to rub it in for a more even coating. If using Parmesan cheese, sprinkle it over the top as well.

Air Dry: Arrange the seasoned corn riblets on a wire rack or plate and let them sit for about 15-20 minutes. This helps the coating to adhere better during cooking.

Preheat the Air Fryer or Oven: If using an air fryer, preheat it to 400°F (200°C). For oven baking, preheat to 425°F (220°C).

            Cook the Riblets:

              - Air Fryer: Place the corn riblets in a single layer in the air fryer basket (you may need to cook them in batches). Cook for 10-12 minutes, flipping halfway through, until they are crispy and golden brown.

                - Oven: Line a baking sheet with parchment paper and lay the riblets in a single layer. Bake for 20-25 minutes, flipping halfway through, until edges are crispy.

Garnish and Serve: Once cooked, remove the riblets from the air fryer or oven and let them cool for a minute. Garnish with freshly chopped parsley. Serve warm with lemon wedges on the side for an added burst of flavor.
