Crispy Cheddar Zucchini Rounds

2 medium zucchinis, sliced into 1/4-inch rounds

1 cup breadcrumbs (panko recommended for extra crunch)

1 cup shredded sharp cheddar cheese

1/2 cup all-purpose flour

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Cooking spray or olive oil for greasing

Preheat the oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or drizzle with olive oil.

    Prepare the coating mixture: In a shallow dish, mix together the breadcrumbs, cheddar cheese, garlic powder, onion powder, smoked paprika, salt, and pepper.

      Prepare the dredging stations: In a separate bowl, place the all-purpose flour. In another bowl, beat the eggs together until combined.

        Dredge the zucchini rounds: Take each zucchini round and first dip it in the flour, shaking off any excess. Then dip it in the beaten eggs, ensuring it is fully coated. Finally, roll the zucchini in the breadcrumb and cheese mixture, pressing lightly to ensure the coating adheres well. Repeat this process for all the zucchini slices.
