1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably Italian-style)

1 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp Italian seasoning

Salt and pepper, to taste

1 cup marinara sauce (for serving)

Fresh basil leaves (for garnish, optional)

Olive oil (for frying)

Instructions
 

Prep the Chicken: In a large bowl, season the chicken pieces with salt, pepper, garlic powder, onion powder, and Italian seasoning. Mix well and set aside.

    Set Up a Breading Station: In three separate shallow dishes, place the flour in one, beat the eggs in the second, and combine the breadcrumbs and grated Parmesan cheese in the third.

      Bread the Chicken: Dredge each piece of seasoned chicken in the flour, shaking off any excess. Next, dip it in the beaten eggs, allowing excess egg to drip off. Finally, coat the chicken in the breadcrumb and Parmesan mixture, pressing lightly to adhere. Repeat this for all chicken pieces.

        Heat the Oil: In a large skillet, pour enough olive oil to cover the bottom by about 1/4 inch. Heat over medium-high heat until the oil is shimmering.

          Fry the Bites: Carefully add the breaded chicken bites in batches (do not overcrowd the pan). Fry for about 3-4 minutes per side or until golden brown and cooked through. Use a slotted spoon to transfer the fried chicken bites to a paper towel-lined plate to absorb excess oil.
