Ingredients

1 lb chicken tenderloins

1 cup buttermilk

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

1 cup all-purpose flour

1 cup Panko breadcrumbs

1/2 cup grated Parmesan cheese

Vegetable oil (for frying)

Instructions

Marinate the Chicken: In a mixing bowl, combine buttermilk, garlic powder, onion powder, smoked paprika, salt, and black pepper. Add chicken tenderloins and ensure they're fully submerged. Cover and refrigerate for at least 1 hour (or overnight for best flavor).

Prepare the Breading Station: Set up three shallow dishes. In the first, place the flour. In the second, place a mixture of Panko breadcrumbs and grated Parmesan cheese. For the third, lightly whisk a couple of eggs (about 2).

Coat the Chicken: Remove the chicken from the buttermilk marinade, allowing excess to drip off. Then, coat each tenderloin in flour, shaking off any excess, before dipping into the beaten eggs. Finally, roll the tenderloin in the Panko-Parmesan mixture, pressing gently to adhere.

Heat the Oil: In a large skillet or frying pan, heat about 1/3 inch of vegetable oil over medium-high heat. To test if the oil is ready, drop in a breadcrumb; it should sizzle immediately.

Fry the Chicken: Working in batches, add the coated chicken tenders to the hot oil. Do not overcrowd the pan. Fry each side for about 3-4 minutes, or until golden brown and crispy. Use tongs to turn them halfway through cooking for even browning.

Drain and Cool: Once cooked, place the chicken tenders on a plate lined with paper towels to absorb excess oil. Sprinkle lightly with salt.

Serve: Enjoy your crispy chicken tenders hot with your choice of dipping sauces (like honey mustard, barbecue sauce, or ranch dressing) and a side of your favorite veggies or fries!
