1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cumin

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1 cup mixed nuts (such as almonds, cashews, and walnuts)

1/2 cup roasted pumpkin seeds

1/2 cup crispy rice cereal

1/4 cup dried cranberries or raisins (optional)

Fresh herbs (parsley or cilantro) for garnish

Instructions
 

Preheat your oven: Start by preheating your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the chickpeas: In a mixing bowl, combine the drained chickpeas, olive oil, smoked paprika, garlic powder, onion powder, cumin, sea salt, and black pepper. Stir well until all chickpeas are evenly coated with the spices.

      Roast the chickpeas: Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Roast them in the preheated oven for 20-25 minutes, shaking the pan halfway through, until they are golden brown and crispy.

        Mix the snack components: While the chickpeas are roasting, in a large mixing bowl, combine the mixed nuts, roasted pumpkin seeds, crispy rice cereal, and dried cranberries or raisins if using.

          Combine and toss: Once the chickpeas are done roasting, remove them from the oven and let them cool for a few minutes. Then, add the crispy chickpeas to the snack mix, tossing everything together until well combined.
