Crispy Chickpea Tacos with Avocado Sauce

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon cumin

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper (adjust for spice level)

Salt and pepper, to taste

For the Avocado Sauce:

1 ripe avocado

1/2 cup Greek yogurt (or plant-based yogurt for a vegan option)

Juice of 1 lime

1 garlic clove, minced

Salt, to taste

2 tablespoons fresh cilantro, chopped (optional)

For the Tacos:

8 small corn or flour tortillas

1 cup red cabbage, finely shredded

1 cup cherry tomatoes, halved

Fresh lime wedges, for serving

Extra cilantro leaves, for garnish

Instructions
 

Prepare the Crispy Chickpeas:

    - Preheat your oven to 400°F (200°C).

      - Pat the chickpeas dry with paper towels to remove excess moisture. Place them in a bowl.

        - Drizzle the olive oil over the chickpeas and sprinkle with smoked paprika, cumin, garlic powder, cayenne pepper, salt, and pepper. Toss them well to ensure they are evenly coated.

          - Spread the chickpeas in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until golden brown and crispy, stirring halfway through for even cooking.

            Make the Avocado Sauce:

              - While the chickpeas are baking, prepare the avocado sauce. In a blender or food processor, combine the ripe avocado, Greek yogurt, lime juice, minced garlic, and salt.
