Ingredients

2 lbs chicken wings

1 tbsp baking powder

1 tsp salt

1 tsp black pepper

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust for spice preference)

1/2 tsp dried thyme

1/2 tsp dried oregano

1 tbsp olive oil

Optional: Fresh parsley for garnish

Optional: Hot sauce for serving

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with aluminum foil and place a wire rack on top. This will allow air to circulate around the wings for extra crispiness.

Prepare the Chicken Wings: Pat the chicken wings dry with paper towels. Removing excess moisture is key to achieving a crispy texture.

Make the Dry Rub: In a large mixing bowl, combine baking powder, salt, black pepper, garlic powder, onion powder, smoked paprika, cayenne pepper, thyme, and oregano. Mix well to combine all the spices evenly.

Coat the Wings: Drizzle the olive oil over the chicken wings. Toss to coat them lightly with the oil. Then, sprinkle the dry rub mixture over the wings and toss until they are well-coated on all sides.

Arrange on Baking Sheet: Place the seasoned wings in a single layer on the wire rack. Make sure they are not touching each other to allow the hot air to circulate properly.

Bake: Bake the wings in the preheated oven for about 40-45 minutes, flipping them halfway through to ensure an even crispiness.

Broil for Extra Crisp: For an extra crispy finish, place the wings under the broiler for 2-3 minutes at the end of baking. Keep a close eye on them to avoid burning.

Serve: Once the wings are beautifully golden and crispy, remove them from the oven. Let them rest for a few minutes, then garnish with fresh parsley if desired. Serve with hot sauce or your favorite dipping sauce on the side.
