4 large russet potatoes

4 tablespoons olive oil

4 cloves of garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

½ teaspoon smoked paprika

½ teaspoon sea salt (adjust to taste)

¼ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Parmesan cheese, grated (optional, for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Potatoes: Wash the russet potatoes thoroughly to remove any dirt. Leave the skin on for added texture and nutrients. Cut each potato into evenly-sized wedges or thin strips, about ¼ inch thick.

      Soak the Fries: Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This step helps to remove excess starch, making the fries extra crispy.

        Dry the Potatoes: After soaking, drain the potatoes and pat them very dry with paper towels. Ensure there is no moisture left, as this will help them crisp up better in the oven.

          Season the Fries: In a large mixing bowl, combine the dried potato wedges with olive oil, minced garlic, chopped rosemary, chopped thyme, smoked paprika, salt, and pepper. Toss until the fries are evenly coated with the seasoning mixture.
