Ingredients

1 lb (450g) chicken thighs, boneless and skinless

¼ cup Dijon mustard

¼ cup pure maple syrup

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

½ cup panko breadcrumbs

Fresh parsley, chopped (for garnish)

Instructions

Marinate the Chicken: In a bowl, mix together the Dijon mustard, maple syrup, olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Add the chicken thighs to the marinade, making sure they are well coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

Prepare Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

Coat the Chicken: Once marinated, remove the chicken thighs from the marinade, allowing any excess to drip off. Dredge each thigh in the panko breadcrumbs until fully coated.

Air Fry the Chicken: Place the coated chicken thighs in the air fryer basket in a single layer. Cook for 12-15 minutes, flipping halfway through, until the chicken is golden brown and reaches an internal temperature of 165°F (74°C).

Serve: Once cooked, remove the chicken from the air fryer and let rest for a few minutes. Garnish with chopped parsley before serving. Pair with your favorite side dishes, such as roasted vegetables or a fresh salad.
