2 large sweet onions (like Vidalia or Walla Walla)

1 cup all-purpose flour

1 cup breadcrumbs (panko or regular)

1/2 cup buttermilk

1 large egg

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice)

Salt and pepper to taste

Oil for frying (vegetable or canola)

For the Dip:

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon honey

1 teaspoon lemon juice

1 teaspoon smoked paprika

Salt and pepper to taste

Prepare the Onions: Peel the onions and slice them into 1/2-inch thick rings. Separate the rings and set them aside.

    Make the Batter: In a mixing bowl, whisk together the flour, garlic powder, smoked paprika, cayenne pepper, salt, and pepper until well combined. In another bowl, beat the egg and mix it with the buttermilk.

      Coat the Onion Rings: Dip each onion ring into the buttermilk mixture, letting excess drip off, then coat with the flour mixture. Repeat this process for extra crunch by dipping the coated rings back into the buttermilk mixture before rolling them in the breadcrumbs.

        Heat the Oil: In a deep skillet or fryer, heat oil over medium-high heat until it reaches 350°F (175°C). Carefully test the oil with a small piece of onion; if it sizzles immediately, it's ready.
