4 medium boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon dried Italian herbs (oregano, basil, thyme mix)

Salt and pepper to taste

Cooking spray or 2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Chicken: Place the chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness of about 1/2 inch. This ensures even cooking.

      Set Up the Breading Station: In three shallow dishes, prepare your breading station:

        - In the first dish, add the flour, seasoning it with salt and pepper.

          - In the second dish, beat the eggs until well mixed.

            - In the third dish, combine panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, and dried Italian herbs. Mix well to distribute the seasoning evenly.

              Bread the Chicken: Take each chicken breast and first coat it lightly with flour, shaking off any excess. Next, dip it into the beaten eggs, allowing any excess to drip off, then place it in the panko mixture. Press down firmly to ensure an even coating. Repeat for all chicken breasts.

                Arrange on Baking Sheet: Place the coated chicken cutlets on the prepared baking sheet. For extra crispiness, spray the tops of the chicken cutlets lightly with cooking spray or drizzle with olive oil.
