Ingredients

4 large ears of fresh corn

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1/2 cup olive oil

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Corn: Stand each ear of corn upright on a cutting board. Carefully slice down the sides to remove the kernels, ensuring you create long strips. Once all kernels are removed, take each corn cob and slice it into quarters lengthwise to form the ribs.

Make the Coating: In a large bowl, whisk together the grated Parmesan cheese, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper.

Coat the Corn Ribs: Brush the corn ribs with olive oil, ensuring they are well-coated. Then, dip each rib into the Parmesan mixture, pressing lightly to help the coating stick.

Arrange in a Baking Dish: Place the coated corn ribs in a single layer on a baking sheet lined with parchment paper. Make sure they are not overcrowded to ensure even cooking and crispiness.

Bake to Perfection: Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the corn ribs are golden brown and crispy.

Garnish and Serve: Once baked, remove them from the oven, let them cool slightly, and then sprinkle with chopped parsley for a fresh touch. Serve with lemon wedges for squeezing over the top.
