2 large sweet potatoes, peeled and cut into wedges

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

2 teaspoons garlic powder

1 teaspoon smoked paprika

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

2 large eggs

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and enhance crispiness.
