1 cup polenta (cornmeal)

4 cups water or vegetable broth

1 teaspoon salt

1 teaspoon garlic powder

1 teaspoon freshly cracked black pepper

1 cup grated Parmesan cheese

2 tablespoons olive oil (for frying)

Fresh herbs (like parsley or basil) for garnish

Optional: Marinara or aioli for dipping

Cook the Polenta: In a large saucepan, bring 4 cups of water or vegetable broth to a boil. Add 1 teaspoon of salt and slowly whisk in the polenta. Reduce the heat to low, stirring constantly, until the mixture thickens (about 5-7 minutes).

    Add Flavor: Stir in the garlic powder, black pepper, and half of the grated Parmesan cheese. Cook for another minute until well combined.

      Set and Chill: Pour the polenta into a greased baking dish (about 9x9 inches) and spread it evenly. Smooth the top and allow it to cool at room temperature for about 10 minutes, then refrigerate for at least 1 hour or until completely set.

        Slice and Prepare: Once the polenta is firm, turn it out onto a cutting board and cut it into rounds using a cookie cutter or a glass (about 2-3 inches in diameter).

          Coat with Cheese: Preheat a non-stick skillet or frying pan over medium heat. Dredge each polenta round in the remaining Parmesan cheese, ensuring both sides are coated.

            Fry the Rounds: Add olive oil to the hot skillet. Once hot, place the polenta rounds in the pan (work in batches if necessary) and fry for 3-4 minutes on each side, or until golden brown and crispy.

              Drain and Garnish: Remove the crispy polenta rounds from the skillet and place them on paper towels to absorb excess oil. Garnish with fresh herbs.
