2 medium zucchinis

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika (or regular paprika)

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

Cooking spray or olive oil for drizzling

Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking.

    Prepare Zucchini: Wash and dry the zucchinis. Slice them into thin rounds, about 1/4 inch thick. You want them to be uniform for even cooking.

      Set Up Breading Station: In a shallow bowl, whisk together the eggs. In a second shallow bowl, combine the Parmesan cheese, breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and black pepper.
