Ingredients

1 pound large carrots, peeled and cut into fry shapes

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon sea salt

¼ teaspoon black pepper

2 tablespoons cornstarch (for extra crispiness)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Carrots: After peeling the carrots, cut them into sticks about ¼ to ½ inch thick to ensure even cooking. Try to keep them uniform in size for optimal crispiness.

Season the Carrots: In a large mixing bowl, add the carrot fries, olive oil, smoked paprika, garlic powder, onion powder, salt, pepper, and cornstarch. Toss everything together until the carrots are well coated with the oil and spices. The cornstarch will help achieve that extra crispy texture.

Arrange on Baking Sheet: Spread the carrot fries in a single layer on the prepared baking sheet. Make sure they aren’t touching to ensure they roast rather than steam.

Roast in the Oven: Place the baking sheet in the preheated oven and bake for 20 minutes. After 20 minutes, carefully flip the carrot fries and roast for another 10-15 minutes, or until they are golden brown and crispy.

Garnish and Serve: Once the carrot fries are done, remove them from the oven and let them cool for a few minutes. Sprinkle with fresh parsley for a pop of color and additional flavor. Serve these crispy delights with your favorite dipping sauce!
