Crispy Sesame Chicken Lettuce Wraps

1 lb boneless, skinless chicken thighs, diced

2 tablespoons cornstarch

1 tablespoon soy sauce

1 tablespoon sesame oil

2 tablespoons vegetable oil (for frying)

1 cup shiitake mushrooms, finely chopped

1 bell pepper, diced (red or yellow for color)

1/2 cup water chestnuts, diced

3 green onions, finely sliced

2 cloves garlic, minced

1 tablespoon ginger, minced

3 tablespoons hoisin sauce

1 tablespoon rice vinegar

1 tablespoon sesame seeds (toasted)

Fresh lettuce leaves (e.g., butter lettuce or romaine)

Instructions
 

Prepare the Chicken: In a mixing bowl, combine diced chicken thighs with cornstarch, soy sauce, and sesame oil. Toss until chicken is well-coated. Let it marinate for at least 15 minutes.

    Cook the Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken and cook for about 5-7 minutes until golden and crispy. Remove from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add garlic and ginger, cooking for about 30 seconds until fragrant. Then add the chopped shiitake mushrooms, bell pepper, and water chestnuts. Stir-fry for another 4-5 minutes until vegetables are tender.

        Combine Ingredients: Lower the heat to medium and return the crispy chicken to the skillet. Add hoisin sauce, rice vinegar, and half of the sliced green onions. Stir everything together and cook for an additional 2-3 minutes until heated through.

          Serve: Spoon the sesame chicken mixture into the center of lettuce leaves. Sprinkle with the remaining green onions and toasted sesame seeds. Serve immediately with your choice of dipping sauce or extra hoisin sauce on the side.
