Instructions

Prepare the Shrimp Mixture: In a food processor, add the raw shrimp and pulse until finely chopped but not puréed. Transfer to a mixing bowl.

Add Vegetables and Seasoning: To the bowl with chopped shrimp, add panko bread crumbs, green onions, grated carrots, minced garlic, grated ginger, egg, soy sauce, cornstarch, salt, and pepper. Mix well until all ingredients are uniformly combined.

Form the Balls: Using your hands, portion out the shrimp mixture and roll it into balls, about 1 inch in diameter. Place the formed balls on a parchment-lined baking sheet.

Prepare for Frying: In a shallow dish, place the all-purpose flour. Gently roll each shrimp ball in the flour, ensuring they are coated evenly.

Heat the Oil: In a large, deep skillet or pot, heat about 2 inches of vegetable oil over medium heat. You can test the oil temperature by dropping a small piece of bread in; if it sizzles, it’s ready.

Fry the Shrimp Balls: Carefully place the shrimp balls into the hot oil, a few at a time, making sure not to overcrowd the pan. Fry for about 4-5 minutes or until they are golden brown and crispy, turning them occasionally for even cooking.

Drain and Cool: Once crispy, use a slotted spoon to remove the shrimp balls from the oil and place them on a plate lined with paper towels to drain excess oil.

Make the Sweet Chili Sauce: In a small bowl, combine sweet chili sauce, rice vinegar, lime juice, and sesame oil. Mix well and set aside.

Serve: Arrange the crispy shrimp balls on a serving platter and drizzle with the sweet chili sauce. Garnish with chopped cilantro for an extra pop of flavor.

Enjoy your delicious Crispy Shrimp Balls with Sweet Chili Sauce as a perfect appetizer or finger food at your next gathering!
