1.5 lbs baby potatoes (preferably Yukon Gold or Red)

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon sea salt

½ teaspoon black pepper

½ teaspoon smoked paprika (optional)

2 tablespoons fresh parsley, chopped (for garnish)

Freshly grated Parmesan cheese (optional, for serving)

Preheat the Oven: Begin by preheating your oven to 450°F (230°C). This high temperature will help achieve that crispy texture.

    Boil the Potatoes: In a large pot, add the baby potatoes and cover them with water. Bring to a boil over high heat, then reduce to a simmer. Cook the potatoes for about 15-20 minutes, or until they are fork-tender but not falling apart.

      Drain and Cool: Once the potatoes are cooked, drain them in a colander and let them sit for about 5 minutes to evaporate excess moisture. This will help them crisp up in the oven.

        Smash the Potatoes: Line a baking sheet with parchment paper for easy cleanup. Place the warm potatoes on the baking sheet, and using a potato masher or fork, gently smash each potato until they are about ½ inch thick.

          Add Garlic Mixture: In a small bowl, combine the olive oil, minced garlic, sea salt, black pepper, and smoked paprika (if using). Drizzle this mixture over the smashed potatoes, ensuring each potato is well coated.
