One of the secrets to achieving that coveted crispy texture with your air-fried salmon lies in the use of cornstarch. This versatile ingredient works by forming a thin, crispy coating on the fish when it is exposed to the hot air circulating within the air fryer. When salmon is coated with cornstarch, it helps absorb moisture and creates a barrier that locks in flavors while allowing the exterior to crisp up beautifully.

Ingredients

4 (6 oz) salmon fillets, skin-on

1/2 cup teriyaki sauce (store-bought or homemade)

1 tbsp honey or maple syrup

1 clove garlic, minced

1 tsp fresh ginger, grated

1/2 tsp sesame oil

1 tbsp rice vinegar

Salt and pepper, to taste

2 tbsp cornstarch

1 tbsp sesame seeds (optional, for garnish)

2 green onions, sliced (optional, for garnish)

Instructions

Marinate the Salmon: In a bowl, whisk together the teriyaki sauce, honey (or maple syrup), minced garlic, grated ginger, sesame oil, and rice vinegar. Season the salmon fillets with salt and pepper, then place them in a shallow dish or resealable bag. Pour the marinade over the salmon, ensuring they are well coated. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator).

Prepare for Air Frying: After marinating, remove the salmon from the marinade, allowing the excess liquid to drip off. Reserve the marinade for later use. Sprinkle cornstarch evenly over the skin-side of the salmon fillets and press gently to adhere. This will create a crispy texture when cooking.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

Air Fry the Salmon: Place the salmon fillets skin-side down in the air fryer basket, making sure they are not overcrowded. Air fry the salmon at 400°F (200°C) for about 8-10 minutes, or until the salmon is cooked through and the skin is crispy.

Glaze the Salmon: While the salmon is frying, heat the reserved teriyaki marinade in a small saucepan over medium heat. Allow it to simmer for about 5 minutes, stirring occasionally, until it thickens slightly.

Serve: Once the salmon is done, remove it from the air fryer and drizzle the thickened teriyaki sauce over the fillets. Garnish with sesame seeds and sliced green onions, if desired.

Enjoy: Serve the crispy teriyaki air-fried salmon alongside steamed rice or grilled vegetables for a delicious and healthy meal!
