1/2 cup cornstarch

Marinate the Chicken: In a bowl, combine soy sauce, mirin, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Whisk until smooth. Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes or up to 2 hours for enhanced flavor.

    Prepare for Frying: After marinating, remove the chicken from the refrigerator. In a separate bowl, add the cornstarch. Dredge each piece of marinated chicken in the cornstarch, shaking off any excess to ensure a crisp coating.
