Crispy Tofu Teriyaki Nuggets

Ingredients
  

1 block (14 oz) extra-firm tofu, pressed and drained

1 cup cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon smoked paprika

½ cup all-purpose flour

1 cup panko breadcrumbs

Vegetable oil, for frying

For the Teriyaki Sauce:

¼ cup soy sauce

¼ cup mirin

2 tablespoons packed brown sugar

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon grated ginger

1 teaspoon minced garlic

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Instructions
 

Prepare the Tofu:

    - Cut the pressed tofu into bite-sized cubes or nugget shapes. Pat the pieces dry with a paper towel to remove excess moisture.

      Breading Setup:

        - In a shallow dish, mix together cornstarch, garlic powder, onion powder, salt, black pepper, and smoked paprika.

          - In another shallow dish, place the all-purpose flour.

            - In a third shallow dish, add the panko breadcrumbs.

              Breading Process:

                - Coat each tofu piece first in the cornstarch mixture, then dip it into the flour, followed by the panko breadcrumbs. Make sure to coat well for maximum crispiness.

                  Fry the Nuggets:

                    - In a large, deep skillet or frying pan, heat about ½ inch of vegetable oil over medium-high heat.

                      - Once the oil is hot, carefully add the breaded tofu nuggets in batches, being sure not to overcrowd the pan. Fry until golden brown and crispy, approximately 3-4 minutes on each side.

                        - Use a slotted spoon to transfer the cooked nuggets to a plate lined with paper towels to absorb excess oil.

                          Make the Teriyaki Sauce:

                            - In a small saucepan over medium heat, combine soy sauce, mirin, brown sugar, rice vinegar, sesame oil, grated ginger, and minced garlic. Stir until sugar dissolves and bring to a gentle simmer.

                              - Stir in the cornstarch slurry and cook for another 1-2 minutes until the sauce thickens. Remove from heat.

                                Coat the Nuggets:

                                  - Once the tofu nuggets are fried and crispy, drizzle the teriyaki sauce over them or toss the nuggets in the sauce until well-coated.

                                    Serve and Enjoy:
