2 medium zucchinis, grated

1 teaspoon salt

1/2 cup all-purpose flour

1/2 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

2 large eggs

2 cloves garlic, minced

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

Olive oil for frying

Sour cream or yogurt (for serving, optional)

Instructions
 

Start by grating the zucchinis using a box grater or food processor. Place the grated zucchini in a clean dish towel or cheesecloth, sprinkle with salt, and let it sit for about 10-15 minutes to draw out excess moisture. After that, wring out the zucchini to remove as much water as possible.

    In a large mixing bowl, combine the drained zucchini, all-purpose flour, Parmesan cheese, chopped parsley, eggs, minced garlic, black pepper, and red pepper flakes (if using). Mix until well combined.

      Heat a large skillet over medium heat and add enough olive oil to coat the bottom of the pan.

        Once the oil is hot, drop spoonfuls of the zucchini mixture into the skillet, flattening gently with a spatula to form fritters. Fry in batches, making sure not to overcrowd the pan.

          Cook the fritters for about 3-4 minutes on each side or until they are golden brown and crispy. You may need to adjust the heat to prevent burning.

            Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil. Continue frying until all the batter is cooked.

              Serve warm with a dollop of sour cream or yogurt on the side for dipping. Garnish with extra parsley if desired.
