Crockpot Cheesy Veggie Chili

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) diced tomatoes with green chilies

1 cup corn kernels (frozen or canned)

1 bell pepper (any color), diced

1 medium onion, diced

2 cloves garlic, minced

1 medium zucchini, diced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

4 oz cream cheese (cubed)

1 cup shredded cheddar cheese

Optional toppings: sour cream, avocado, extra cheese, cilantro

Instructions
 

Prep the Vegetables: Start by preparing all your vegetables. Dice the onion, bell pepper, and zucchini, and mince the garlic.

    Combine Ingredients: In a large crockpot, add the black beans, kidney beans, diced tomatoes, corn, bell pepper, onion, zucchini, garlic, chili powder, cumin, smoked paprika, salt, and pepper. Stir everything together until well combined.

      Add Cream Cheese: Distribute the cubed cream cheese evenly on top of the veggie mixture. This will melt into the chili and create a creamy texture as it cooks.

        Cook: Cover the crockpot and set it to low heat for 6-8 hours, or high heat for 3-4 hours. Stir once or twice during cooking to ensure even distribution of flavors.

          Stir in Cheese: About 30 minutes before serving, stir in the shredded cheddar cheese. Allow it to melt and combine into the chili.

            Serve: Once cooked, taste and adjust seasoning if necessary. Serve the chili hot, garnished with your choice of optional toppings such as sour cream, diced avocado, extra shredded cheese, and fresh cilantro.
