Crockpot Chicken Corn Chowder

1 pound boneless, skinless chicken breasts

4 cups frozen corn (sweet corn)

1 medium onion, diced

2 cloves garlic, minced

2 medium potatoes, peeled and diced

4 cups chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded sharp cheddar cheese (plus extra for garnish)

ΒΌ cup chopped fresh parsley (for garnish)

Optional: 4 slices of cooked bacon, crumbled (for garnish)

Instructions
 

Prepare the Chicken: Place the boneless, skinless chicken breasts at the bottom of the crockpot.

    Add Vegetables: On top of the chicken, layer the frozen corn, diced onion, minced garlic, and diced potatoes.

      Season: Sprinkle the dried thyme, smoked paprika, salt, and pepper over the vegetable layer.

        Pour Broth: Pour the chicken broth over everything in the crockpot, gently stirring to combine a little without disturbing the chicken too much.

          Cook: Cover the crockpot with a lid and set on low for 6 to 8 hours or high for 3 to 4 hours, until the chicken is cooked through and tender.

            Shred the Chicken: Once cooked, remove the chicken breasts carefully and shred them using two forks. Return the shredded chicken back into the chowder.

              Add Cream & Cheese: Stir in the heavy cream and shredded cheddar cheese. Mix until smooth and creamy. Taste for seasoning, adjusting salt and pepper if necessary.
