Ingredients

2 cups cooked shredded chicken (rotisserie chicken works great)

1 (8 oz) block cream cheese, softened

1 cup sour cream

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 can (10 oz) diced tomatoes with green chilies (like Rotel)

1 cup corn (frozen or canned, drained)

1 packet taco seasoning (or about 2-3 tablespoons homemade)

1 jalapeño, finely chopped (optional for extra heat)

1 tablespoon lime juice

Tortilla chips for serving

Optional toppings: sliced green onions, fresh cilantro, sliced black olives, avocado

Instructions

Prepare the Base: In a large mixing bowl, combine the softened cream cheese, sour cream, and taco seasoning. Mix until well-blended and creamy.

Combine Ingredients: Add the shredded chicken, diced tomatoes with green chilies, corn, lime juice, and jalapeño (if using) to the bowl. Stir everything together until all ingredients are evenly mixed.

Cheese It Up: Fold in the shredded cheddar and Monterey Jack cheeses, reserving a small handful of cheese for topping if desired.

Crockpot Time: Transfer the mixture to your crockpot, spreading it evenly. Set the crockpot to low heat. If you have reserved cheese, sprinkle it on top now.

Cook: Cover and cook for 2-3 hours on low until the dip is hot and bubbly, stirring occasionally.

Serve and Enjoy: Once heated thoroughly, give the dip a final stir. Serve hot with tortilla chips, and add optional toppings such as sliced green onions, fresh cilantro, sliced olives, or avocado on top for an extra flavor boost!
