1 pound boneless, skinless chicken breasts

1 medium onion, diced

2 cloves garlic, minced

4 carrots, sliced

3 celery stalks, sliced

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon dried rosemary

4 cups low-sodium chicken broth

1 cup heavy cream

1 cup frozen corn

1/4 cup all-purpose flour

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Biscuit dough or pie crust (for topping, optional)

Instructions
 

Prepare the Chicken: Place the chicken breasts in the bottom of the crockpot. Season with salt, pepper, thyme, and rosemary.

    Add Vegetables: Layer the diced onion, minced garlic, sliced carrots, and sliced celery over the chicken. Then, add the frozen peas and corn on top.

      Add Broth: Pour the chicken broth over all the ingredients in the crockpot. Make sure everything is submerged.

        Cook: Cover the crockpot and set it on low for 6-8 hours, or on high for 3-4 hours, until the chicken is very tender.

          Shred the Chicken: About 30 minutes before serving, carefully remove the chicken breasts. Shred the chicken with two forks and return the shredded chicken to the pot.

            Thicken the Soup: In a small bowl, mix the heavy cream with the flour until smooth. Pour this mixture into the crockpot, stirring well to combine. Let the soup cook for an additional 30 minutes on low to thicken.

              Adjust Seasoning: Taste the soup and adjust seasoning with additional salt and pepper if necessary.

                Serve: Ladle the soup into bowls and garnish with chopped fresh parsley. If desired, top with biscuit dough or pie crust baked separately according to package instructions.
