1.5 lbs boneless, skinless chicken breasts

2 cups frozen corn kernels

1 cup diced bell peppers (mix of red and green for color)

1 small onion, finely chopped

3 cloves garlic, minced

2 cups chicken broth

1 cup heavy cream or coconut milk for a dairy-free option

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Place the boneless, skinless chicken breasts at the bottom of the crockpot. Season both sides generously with salt, pepper, paprika, garlic powder, onion powder, and thyme.
