1 pound frozen meatballs (beef, turkey, or chicken)

1 cup diced carrots

1 cup diced celery

1 cup diced onion

3 cloves garlic, minced

1 (14.5 oz) can diced tomatoes (with juice)

4 cups beef or vegetable broth

1 cup fresh spinach leaves

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/2 cup small pasta (like ditalini or elbow macaroni)

1/2 cup grated Parmesan cheese (for serving)

Fresh basil leaves (for garnish)

Prepare Your Veggies: Start by dicing the carrots, celery, and onion into small, even pieces. Mince the garlic as well.

    Layer the Ingredients: In your crockpot, add the frozen meatballs, diced carrots, diced celery, diced onion, and minced garlic.

      Add Tomatoes and Broth: Pour in the can of diced tomatoes (with their juice) and add the beef or vegetable broth. Stir gently to combine.

        Season the Soup: Add the dried basil, oregano, red pepper flakes (if using), and season with salt and pepper to taste.

          Cook It Up: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the vegetables are tender and the meatballs are heated through.

            Cook the Pasta: About 30 minutes before serving, stir in the pasta. If your soup is too thick, feel free to add a little more broth or water to reach your desired consistency.

              Add the Spinach: Stir in the fresh spinach leaves about 10 minutes before the soup is done to wilt them slightly.
