Crockpot Spaghetti with Hatch Peppers

1 lb ground beef or turkey

1 medium onion, diced

3 cloves garlic, minced

2 cups chopped fresh Hatch peppers (mild or hot, depending on your heat preference)

1 can (28 oz) crushed tomatoes

2 cups beef or vegetable broth

2 tbsp tomato paste

1 tsp Italian seasoning

1 tsp smoked paprika

Salt and pepper to taste

12 oz spaghetti (uncooked)

Fresh basil or parsley for garnish

Grated Parmesan cheese for serving

Instructions
 

Prepare the Meat Mixture: In a skillet over medium heat, brown the ground beef or turkey. Add the diced onion and minced garlic, cooking until the onion becomes translucent. Drain excess fat, if necessary.

    Add the Hatch Peppers: Stir in the chopped Hatch peppers to the skillet and cook for an additional 2-3 minutes until they become fragrant.

      Combine Ingredients in the Crockpot: Transfer the meat mixture to the crockpot, then add the crushed tomatoes, beef or vegetable broth, tomato paste, Italian seasoning, smoked paprika, salt, and pepper. Stir until all ingredients are well combined.

        Cook the Spaghetti: Cover the crockpot and cook on low for 4-6 hours or on high for 2-3 hours. About 30 minutes before serving, break the uncooked spaghetti into halves and stir it into the sauce. Make sure the spaghetti is submerged in the sauce cover and continue cooking until the pasta is tender and cooked through.

          Serve: Once cooked, give it a good stir, taste, and adjust seasonings if necessary. Serve the crockpot spaghetti hot, garnished with fresh basil or parsley, and a sprinkle of grated Parmesan cheese on top.
