Ingredients

1 pound boneless, skinless chicken breasts

2 cans (15 oz each) white beans (such as Great Northern or Cannellini), drained and rinsed

1 medium onion, finely chopped

3 cloves garlic, minced

1 green bell pepper, diced

1 can (4 oz) diced green chilies

2 cups low-sodium chicken broth

1 cup corn (fresh, frozen, or canned)

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup cream cheese, cubed (or a dairy-free alternative)

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Prep the Ingredients: Start by preparing all your fresh ingredients. Chop the onion, mince the garlic, and dice the green bell pepper. It helps to have everything ready for a smooth cooking process!

Layer the Ingredients: In the crockpot, layer the bottom with the drained white beans, adding the cooked chicken breasts on top. Follow this with the chopped onion, minced garlic, and diced green bell pepper.

Add the Spices and Broth: Sprinkle the cumin, chili powder, smoked paprika, salt, and black pepper over the top. Pour in the chicken broth and add the diced green chilies and corn.

Cook the Chicken: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.

Shred the Chicken: Once cooked, take the chicken breasts out of the crockpot, shred them with two forks, and return the shredded chicken to the chili.

Stir in the Cream Cheese: Add the cream cheese to the crockpot. Stir well until the cream cheese is melted and fully incorporated, giving the chili a creamy texture.

Final Seasoning: Taste the chili and adjust seasoning if necessary, adding more salt or spices to balance the flavors.

Serve: Ladle the chili into bowls and garnish with fresh cilantro. Serve with lime wedges on the side for a burst of flavor.

Enjoy! Pair it with tortilla chips, cornbread, or enjoy it on its own for a hearty meal.
