Crunchy Almond Coconut Bites

1 cup raw almonds

1 cup unsweetened shredded coconut

1/2 cup pitted dates, packed

1/4 cup almond butter

2 tablespoons honey or maple syrup (for a vegan option)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 teaspoon ground cinnamon

1/4 cup dark chocolate chips (optional, for drizzling)

Instructions
 

Prepare the Almonds: Begin by preheating your oven to 350°F (175°C). Spread the raw almonds on a baking sheet and toast them in the oven for about 10-12 minutes until they're fragrant and lightly golden. Stir the almonds halfway through for even toasting.

    Blend the Ingredients: Once the almonds are toasted and cooled, transfer them to a food processor. Add the unsweetened shredded coconut, pitted dates, almond butter, honey (or maple syrup), vanilla extract, sea salt, and ground cinnamon. Pulse the mixture until it begins to form a sticky dough. You may need to scrape down the sides occasionally for even blending.

      Form the Bites: With clean hands, take small portions of the mixture and roll them into bite-sized balls or press them into a lined 8x8 inch square pan for bars. For added crunch, you can lightly coat the outside of the bites in extra shredded coconut.

        Chill: Place the formed bites on a parchment-lined baking sheet and refrigerate for about 30-60 minutes to set. If you made a batch of bars, cut them into squares after they have chilled.

          Optional Chocolate Drizzle: If desired, melt the dark chocolate chips in a microwave-safe bowl in 20-second increments, stirring in between until smooth. Drizzle the melted chocolate over the bites using a fork or by putting it in a small zip-top bag and snipping off the corner. Return to the fridge to set the chocolate.
