1 cup Napa cabbage, finely shredded

1 cup purple cabbage, finely shredded

1 cup carrots, grated

1 cup red bell pepper, thinly sliced

½ cup green onions, sliced

½ cup fresh cilantro, chopped

1 cup cooked and cooled chicken breast, shredded (or tofu for a vegetarian option)

½ cup roasted peanuts, roughly chopped

4-6 large lettuce leaves (Butter or Romaine works best)

For the Dressing:

3 tablespoons soy sauce (or tamari for gluten-free)

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon honey or maple syrup (for a vegan option)

1 teaspoon minced garlic

1 teaspoon minced ginger

1 tablespoon sesame seeds

Instructions
 

Prepare the Slaw: In a large mixing bowl, combine the Napa cabbage, purple cabbage, carrots, red bell pepper, green onions, cilantro, chicken (or tofu), and peanuts. Mix well to combine.

    Make the Dressing: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey (or maple syrup), minced garlic, minced ginger, and sesame seeds until well combined. Taste and adjust seasoning if necessary, adding more soy sauce for saltiness or honey/maple syrup for sweetness.

      Combine: Pour the dressing over the slaw mixture and toss everything together until the veggies and protein are evenly coated with the dressing.

        Assemble the Wraps: Take a large lettuce leaf and add a generous scoop of the slaw mixture in the center. Fold the sides over the filling and then roll it up from the bottom to top, creating a wrap. Secure with a toothpick if needed.
