Crunchy Avocado Spring Rolls

1 large ripe avocado, sliced

1 cup julienned carrots

1 cup cucumber, peeled and julienned

1 cup red bell pepper, thinly sliced

1 cup fresh spinach leaves

1 cup fresh mint leaves

1 cup fresh cilantro leaves

8-10 spring roll wrappers (rice paper)

1/2 cup cooked rice vermicelli noodles (optional)

1/4 cup sesame seeds, toasted

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon honey or agave syrup (for a vegan option)

1 tablespoon sriracha or chili paste (optional, for a kick)

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the sliced avocado, julienned carrots, cucumber, red bell pepper, spinach, mint, cilantro, and cooked vermicelli noodles (if using). Gently toss the ingredients together to mix.

    Make the Dipping Sauce: In a small bowl, whisk together the soy sauce, lime juice, honey (or agave syrup), and sriracha or chili paste (if using) until well combined. Set aside.

      Soak the Rice Paper Wrappers: Fill a shallow bowl with warm water. Dip one spring roll wrapper into the water for about 10-15 seconds until it becomes pliable. Be careful not to soak too long, or it will tear.

        Assemble the Spring Rolls: Lay the softened wrapper flat on a clean surface. Place a small handful of the filling mixture in the center of the wrapper. Top with a sprinkle of toasted sesame seeds.

          Roll the Spring Rolls: Starting from the edge closest to you, fold the bottom of the wrapper over the filling. Then, fold the sides inward, and continue rolling tightly until your spring roll is fully wrapped. Repeat this process with the remaining wrappers and filling.
