8 rice paper wrappers

1 cup julienned carrots

1 cup julienned cucumbers

1 cup shredded purple cabbage

1/2 cup fresh mint leaves

1/2 cup fresh cilantro leaves

1 avocado, sliced

1/4 cup sesame seeds (for added crunch)

1/4 cup hoisin sauce (for dipping)

2 tablespoons peanut butter (optional, for a creamy dip)

Warm water (for softening rice paper)

Prepare Your Veggies: Start by washing and peeling the carrots and cucumbers. Julienning them into thin strips will ensure they fit well inside the spring rolls. Shred the purple cabbage into thin pieces.

    Soften the Rice Paper: One at a time, soak each rice paper wrapper in warm water for about 20-30 seconds, until it starts to soften. Lay it flat on a clean surface (a cutting board works great).

      Layer the Filling: In the center of the softened rice paper, place a small amount of each filling: a handful of julienned carrots, cucumbers, a small mound of purple cabbage, a few mint and cilantro leaves, and a slice or two of avocado.         Roll It Up: To roll the spring rolls, fold the sides of the rice paper over the filling, then starting from the bottom, carefully roll it up tightly. Make sure to keep the filling compact as you roll. Repeat this process with the remaining rice paper wrappers and fillings.
