1 large English cucumber

1 cup sushi rice

1 1/4 cups water

2 tablespoons rice vinegar

1 tablespoon sugar

1/2 teaspoon salt

1 ripe avocado, sliced

1/2 cup shredded carrots

1/4 cup thinly sliced radishes

4 sheets nori (seaweed)

Soy sauce, for dipping

Sesame seeds, for garnish

Instructions
 

Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a medium saucepan and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 20 minutes or until the water is absorbed. Remove from heat and let it sit covered for 10 minutes.

    Season the Rice: In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice, ensuring not to mash the grains. Allow the rice to cool to room temperature.

      Prepare the Cucumber: Cut the cucumber in half lengthwise and scoop out the seeds using a spoon to create a hollow cavity. Aim for about 1/2 inch thickness on the bottom to hold the filling. Slice the cucumber into bite-sized pieces, about 2-3 inches long.

        Assemble the Sushi Bites: On a clean surface, place a sheet of nori and cut it into small strips about 1 inch wide. Spread a thin layer of sushi rice over each strip of nori. Place a slice of avocado, a few pieces of shredded carrots, and radishes on top of the rice.

          Roll and Slice: Carefully roll the nori around the veggies and rice into a tight cylinder. If needed, wet the edge of the nori with a bit of water to seal it. Slice the rolls into bite-sized pieces.

            Garnish and Serve: Place the cucumber cups on a serving platter. Scoop a sushi roll piece into each cucumber cup and sprinkle with sesame seeds. Serve with soy sauce for dipping.
