Crunchy Ramen Noodle Chicken Salad

2 packs of instant ramen noodles (discard seasoning packets)

2 cups cooked and shredded chicken breast

1 cup coleslaw mix (cabbage and carrots)

1/2 cup green onions, chopped

1/2 cup slivered almonds

1/2 cup crispy wonton strips

1/2 cup cherry tomatoes, halved

1/2 cup cucumbers, thinly sliced

1/4 cup fresh cilantro, chopped

1/3 cup soy sauce

1/4 cup rice vinegar

1/4 cup honey or maple syrup

1 tablespoon sesame oil

1 teaspoon garlic powder

1 teaspoon ground ginger

Salt and pepper to taste

Lemon or lime wedges for garnish (optional)

Instructions
 

Cook the Ramen: In a medium pot, bring water to a boil. Add the ramen noodles and cook according to package instructions (usually about 3-4 minutes). Drain and rinse under cold water to stop the cooking process. Toss with a splash of sesame oil to prevent sticking.

    Prepare the Dressing: In a small bowl, whisk together the soy sauce, rice vinegar, honey (or maple syrup), sesame oil, garlic powder, ground ginger, and a pinch of salt and pepper until well combined.

      Combine Salad Ingredients: In a large mixing bowl, combine the cooked ramen noodles, shredded chicken, coleslaw mix, green onions, cherry tomatoes, cucumbers, and cilantro. Toss everything together until evenly distributed.

        Add Dressing: Pour the dressing over the salad mixture and toss gently to coat all ingredients well. Adjust seasoning with more salt and pepper if needed.
