1 large head of cauliflower, cut into bite-sized florets

1 cup buttermilk (or milk with 1 tablespoon of vinegar for a vegan option)

1 cup all-purpose flour (or gluten-free flour)

1 cup breadcrumbs (Panko for extra crunch)

2 teaspoons ranch seasoning mix (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Cooking spray or olive oil for drizzling

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Cauliflower: In a large mixing bowl, toss the cauliflower florets with a pinch of salt and pepper, allowing to sit for about 10 minutes. This will help draw out moisture.

      Make the Dipping Station: In a bowl, pour the buttermilk. In a separate shallow dish, mix the flour, ranch seasoning, garlic powder, onion powder, smoked paprika, and a dash of salt and pepper until well combined.

        Coat the Cauliflower: Dip each cauliflower floret first into the buttermilk, allowing any excess to drip off, then roll it in the flour mixture to coat evenly. Shake off any excess flour. Repeat until all florets are coated.

          Bread the Cauliflower: After coating in flour, dip the florets back into the buttermilk and then roll them in the breadcrumbs, pressing the breadcrumbs onto the florets to ensure they stick well.

            Arrange on Baking Sheet: Place the breaded florets in a single layer on the prepared baking sheet. Lightly spray or drizzle olive oil over the florets for extra crunch.

              Bake: Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy. Flip the florets halfway through to ensure even cooking.
