14 oz firm tofu, drained and pressed

1 cup mixed salad greens (e.g., spinach, arugula, romaine)

1 cup shredded carrots

1/2 cup red cabbage, thinly sliced

1/2 cucumber, julienned

1/4 cup green onions, chopped

1/4 cup sesame seeds (toasted)

2 tbsp soy sauce

2 tbsp rice vinegar

1 tbsp sesame oil

1 tbsp honey or maple syrup

1 tsp grated fresh ginger

1 clove garlic, minced

Salt and pepper to taste

Optional: crushed peanuts or cashews for garnish

Instructions
 

Prepare the Tofu:

    - Cut the pressed tofu into bite-sized cubes. In a non-stick skillet, heat a tablespoon of oil over medium heat. Add the tofu cubes, season with salt and pepper, and sauté until golden and crispy on all sides, about 8-10 minutes. Remove from heat and allow to cool slightly.

      Make the Dressing:

        - In a bowl, whisk together soy sauce, rice vinegar, sesame oil, honey (or maple syrup), grated ginger, and minced garlic until well combined. Adjust sweetness or saltiness according to your taste.

          Assemble the Salad:

            - In a large mixing bowl, combine the mixed salad greens, shredded carrots, red cabbage, cucumber, and green onions. Add the sautéed tofu and half of the toasted sesame seeds.

              Dress the Salad:

                - Pour the dressing over the salad mixture and gently toss until everything is evenly coated. Taste and adjust seasoning if needed.
