1 medium green cabbage (or napa cabbage, around 1 lb)

1 cup shredded carrots

1 red bell pepper, finely sliced

1 cup cooked quinoa (or rice noodles)

½ cup fresh cilantro, chopped

½ cup scallions, sliced

½ cup toasted peanuts, chopped

1 ripe avocado, sliced

For the Thai Peanut Sauce:

¼ cup creamy peanut butter

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

2 teaspoons honey (or maple syrup, for a vegan option)

1 tablespoon sesame oil

1-2 tablespoons water (to thin the sauce)

1 teaspoon sriracha (optional, for heat)

Juice of 1 lime

Instructions
 

Prepare the Cabbage Leaves:

    - Carefully remove the outer leaves from the cabbage and set aside. You should aim for about 8-10 whole leaves for wrapping.

      - If the leaves are too thick, blanch them in boiling water for about 30 seconds to soften, and then immediately transfer to an ice bath.

        Make the Thai Peanut Sauce:

          - In a medium bowl, combine the peanut butter, soy sauce, rice vinegar, honey, sesame oil, lime juice, and sriracha (if using).

            - Whisk until smooth. If the sauce is too thick, add water, a tablespoon at a time, until desired consistency is reached.

              Assemble the Wraps:

                - On each cabbage leaf, layer a spoonful of quinoa (or rice noodles), shredded carrots, sliced red bell pepper, cilantro, scallions, and avocado.

                  - Drizzle a tablespoon of the Thai peanut sauce over the filling.

                    Wrap It Up:

                      - To wrap, fold the sides of the cabbage leaf over the filling and then roll from the bottom up, ensuring the filling stays secure.

                        Serve:

                          - Place the wraps on a serving platter, drizzle with extra Thai peanut sauce if desired, and garnish with chopped toasted peanuts and additional cilantro.
