1 large head of green cabbage, shredded

1 large carrot, grated

1 red bell pepper, thinly sliced

1 cup sugar snap peas, trimmed and halved

1 cup bean sprouts

½ cup fresh cilantro, chopped

½ cup green onions, sliced

1 cup cooked chicken or tofu, shredded (optional for protein)

8 large rice paper wraps

½ cup roasted peanuts, chopped (for topping)

For the Thai Peanut Sauce:

¼ cup creamy peanut butter

2 tablespoons soy sauce or tamari (for gluten-free)

1 tablespoon maple syrup or honey

1 tablespoon lime juice

1 teaspoon ginger, minced

1 teaspoon garlic, minced

1-2 tablespoons water (to thin the sauce, as needed)

Red chili flakes (optional, for heat)

Instructions
 

Prepare the Slaw: In a large mixing bowl, combine the shredded cabbage, grated carrot, sliced red bell pepper, sugar snap peas, bean sprouts, chopped cilantro, and green onions. If you're adding protein, mix in the shredded chicken or tofu.

    Make the Thai Peanut Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, maple syrup (or honey), lime juice, minced ginger, and minced garlic. Gradually add water until the sauce reaches your desired consistency. If you want a spicy kick, sprinkle in some red chili flakes.

      Assemble the Wraps: Fill a shallow dish with warm water. Dip one rice paper wrap into the water for about 10-15 seconds until it softens. Place the softened wrap on a clean surface.

        Place a small handful (about ¼ cup) of the slaw mixture in the center of the wrapped rice paper, drizzle with a bit of the Thai peanut sauce, and sprinkle some chopped peanuts on top.

          Fold the sides of the rice paper over the filling, then roll from the bottom up to create a tight wrap. Repeat this process with the remaining rice paper wraps and filling ingredients.
