Crunchy Tofu Peanut Lettuce Cups

1 block (14 oz) firm tofu, drained and pressed

2 tablespoons cornstarch

2 tablespoons vegetable oil

1/2 cup roasted peanuts, roughly chopped

1/4 cup scallions, thinly sliced

1/2 cup red bell pepper, finely diced

1 carrot, grated

1 tablespoon soy sauce

1 tablespoon hoisin sauce

1 tablespoon sesame oil

1 teaspoon fresh ginger, minced

1 teaspoon garlic, minced

1 head of butter or romaine lettuce, leaves separated

Fresh cilantro leaves for garnish

Lime wedges for serving

Prepare the Tofu: Begin by pressing the tofu to remove excess moisture. Wrap the tofu block in a clean kitchen towel and place a heavy object on top for about 20 minutes. Once pressed, cut the tofu into small cubes.

    Coat Tofu: Place the cubed tofu into a bowl and sprinkle the cornstarch over it. Gently toss to coat all sides evenly.

      Sauté Tofu: In a large skillet or frying pan, heat the vegetable oil over medium-high heat. Add the coated tofu cubes and cook until all sides are golden and crispy, about 7-10 minutes. Stir occasionally to ensure even cooking.

        Prepare the Sauce: While the tofu is cooking, in a small bowl, whisk together the soy sauce, hoisin sauce, sesame oil, ginger, and garlic until well combined.

          Combine Ingredients: Once the tofu is crispy, pour the sauce over the tofu in the skillet. Add the chopped peanuts, scallions, red bell pepper, and grated carrot. Stir to combine and cook for an additional 2-3 minutes until everything is well coated in the sauce and heated through.

            Assemble Lettuce Cups: Take a lettuce leaf and spoon a generous amount of the tofu-peanut mixture into the center. Repeat with the remaining leaves.
