1 cup jasmine or basmati rice

2 cups water

1 ripe avocado, diced

1 large cucumber, thinly sliced

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1 tablespoon sesame oil

2 tablespoons soy sauce or tamari

1 tablespoon rice vinegar

1 teaspoon honey or agave syrup

1 tablespoon sesame seeds (optional)

Fresh cilantro or parsley for garnish

Salt and pepper to taste

Instructions
 

Cook the Rice: Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rice and 2 cups of water. Bring to a boil, cover, and reduce heat to low. Let simmer for 15-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
