2 large cucumbers, thinly sliced

1 bunch of radishes, thinly sliced

1/4 cup fresh dill, finely chopped

1/4 red onion, thinly sliced

1/2 cup Greek yogurt

2 tablespoons apple cider vinegar

1 tablespoon extra virgin olive oil

1 teaspoon honey (optional, for sweetness)

Salt and pepper to taste

Instructions
 

Start by rinsing the cucumbers and radishes under cold water. Pat them dry with a clean kitchen towel.

    Thinly slice the cucumbers and radishes using a sharp knife or a mandoline for even thickness. Set aside.

      In a large mixing bowl, combine the sliced cucumbers, radishes, chopped dill, and red onion. Gently toss to ensure even distribution of ingredients.

        In a separate small bowl, whisk together the Greek yogurt, apple cider vinegar, olive oil, and honey (if using) until smooth. Season with salt and pepper to taste. Adjust the sweetness or acidity as desired.

          Pour the dressing over the salad mixture and toss gently until everything is well coated.

            Allow the salad to sit for at least 15-20 minutes at room temperature, or in the refrigerator for up to an hour, to let the flavors meld together.
