1 cup all-purpose flour

2 large eggs

1 ½ cups milk

2 tablespoons melted butter

1 teaspoon salt

1 tablespoon chopped fresh chives (optional)

For the Seafood Filling:

1 cup cooked shrimp, chopped

1 cup cooked scallops, chopped

1 tablespoon olive oil

2 cloves garlic, minced

¼ cup onion, finely chopped

1 cup heavy cream

1 teaspoon Dijon mustard

½ cup grated Gruyère cheese

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Prepare the Crepes:

    - In a mixing bowl, whisk together the flour and salt.

      - In another bowl, beat the eggs and add the milk and melted butter. Gradually whisk the egg mixture into the flour until you have a smooth batter.

        - If desired, stir in the chopped chives. Let the batter rest for at least 30 minutes.

          Cook the Crepes:

            - Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or a little butter.

              - Pour about ¼ cup of batter into the skillet, swirling to cover the bottom evenly.

                - Cook for 1-2 minutes until the edges lift slightly, then flip and cook for another minute until golden. Repeat with the remaining batter, stacking the crepes on a plate.

                  Prepare the Seafood Filling:

                    - In a large skillet, heat the olive oil over medium heat. Add the minced garlic and onion, sautéing until the onion is translucent.

                      - Stir in the chopped shrimp and scallops, cooking for 2-3 minutes, until heated through.

                        - Reduce the heat to low, add the heavy cream and Dijon mustard, stirring until combined.

                          - Fold in the Gruyère cheese and cook for an additional 5 minutes, until the mixture is creamy and slightly thickened. Season with salt and pepper to taste.

                            Assemble the Crepes:

                              - Place a crepe on a plate, spoon a generous amount of the seafood mixture onto the center, and fold the crepe over. You can either fold it in halves or quarters. Repeat for the remaining crepes.

                                Serve:
