2 boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup brown rice (or cauliflower rice)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

1 large avocado, diced

1 cup cherry tomatoes, halved

1 small red onion, diced

1 cup shredded lettuce

½ cup shredded cheddar cheese (optional)

Fresh cilantro for garnish

Lime wedges for serving

Marinate the Chicken: In a bowl, whisk together olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Add the chicken breasts, coating them well in the marinade. Let it sit for at least 30 minutes to allow the flavors to meld. You can marinate it in the fridge for up to 4 hours for deeper flavor.

    Cook the Rice: Prepare the brown rice according to package instructions. Alternatively, if you’re using cauliflower rice for a low-carb option, sauté it in a skillet with a bit of olive oil for about 5 minutes on medium heat.
