Ingredients

2 cups fresh figs, quartered

1 cup granulated sugar

1 tablespoon fresh lemon juice

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1 tablespoon cornstarch

1 teaspoon water

1 cup almond flour

1/2 cup rolled oats

1/2 cup unsalted butter, melted

1/4 cup brown sugar

Pinch of salt

1/4 cup slivered almonds (optional, for topping)

Instructions

Prepare the Fig Jam: In a medium saucepan over medium heat, combine the quartered figs, granulated sugar, lemon juice, vanilla extract, and ground cinnamon. Stir well and let it cook for about 10 minutes until the figs soften and break down, stirring occasionally.

Thicken the Mixture: In a small bowl, mix the cornstarch with 1 teaspoon of water to make a slurry. Add this slurry to the fig mixture, stirring continuously until the jam thickens. Remove from heat and let it cool slightly.

Make the Crust and Topping: In a large mixing bowl, combine the almond flour, rolled oats, melted butter, brown sugar, and salt. Mix until all the ingredients are well combined and crumbly.

Assemble the Bake: Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish. Spread half of the almond flour mixture evenly in the bottom of the prepared dish. Pour the fig jam over this layer, spreading it out evenly. Top with the remaining almond flour mixture, ensuring it's evenly distributed over the fig jam.

Add Optional Toppings: If desired, sprinkle slivered almonds on top for an extra crunch and flavor.

Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the jam is bubbling around the edges.

Cool and Serve: Let the bake cool in the pan for at least 15 minutes before slicing into squares. Serve warm or at room temperature, perhaps with a dollop of whipped cream or a scoop of vanilla ice cream.
