Easy Bacon and Spinach Pasta

8 oz spaghetti or your preferred pasta

4 strips of thick-cut bacon, chopped

2 cups fresh spinach, rinsed and roughly chopped

3 cloves garlic, minced

1/4 cup heavy cream

1/2 cup grated Parmesan cheese, plus more for garnish

1/4 tsp red pepper flakes (optional)

Salt and black pepper to taste

2 tbsp olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set aside.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook for about 5-7 minutes, or until the bacon is crispy and golden brown. Using a slotted spoon, transfer the bacon to a plate lined with paper towels to drain excess grease while keeping the bacon warm.

      Sauté the Garlic and Spinach: In the same skillet with the leftover bacon fat, add 2 tablespoons of olive oil (if needed) and sauté the minced garlic for about 1 minute, until fragrant. Add the chopped spinach and cook until wilted, about 2-3 minutes.

        Combine Ingredients: Lower the heat and stir in the heavy cream, allowing it to simmer gently. Add the crispy bacon back to the skillet, followed by the cooked pasta. Toss everything together until the pasta is evenly coated and warmed through.

          Add Parmesan and Seasoning: Gradually sprinkle in the grated Parmesan cheese, stirring until it melts into the sauce. If the sauce seems too thick, add some reserved pasta water until you reach the desired consistency. Season with red pepper flakes (if desired), salt, and black pepper to taste.
