Easy BBQ Chicken Stuffed Sweet Potatoes

4 medium sweet potatoes

2 cups cooked chicken, shredded (rotisserie chicken works great!)

1 cup BBQ sauce (your favorite brand or homemade)

1/2 cup shredded cheddar cheese

1/4 cup green onions, chopped

1/4 cup sour cream (optional)

Salt and pepper, to taste

Olive oil (for drizzling)

Fresh cilantro, for garnish (optional)

Instructions
 

Preheat and Prepare: Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and prick them several times with a fork to allow steam to escape.

    Bake the Sweet Potatoes: Place the sweet potatoes on a baking sheet, drizzle with a bit of olive oil, and sprinkle with salt. Bake in the preheated oven for about 45-60 minutes, or until tender when pierced with a fork.

      Prepare the BBQ Chicken: While the sweet potatoes are baking, in a medium bowl, mix the shredded chicken with the BBQ sauce. Adjust the seasoning with salt and pepper to your liking.

        Assemble the Stuffed Potatoes: Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes. Cut each sweet potato in half lengthwise and gently scoop out some of the flesh to create a pocket for the filling.

          Fill the Sweet Potatoes: Spoon the BBQ chicken mixture into each sweet potato half, making sure to pile it generously. Top each with shredded cheddar cheese.

            Melt the Cheese: Return the stuffed sweet potatoes to the oven for another 10-15 minutes, or until the cheese is melted and bubbling.

              Garnish and Serve: Remove from the oven, top with chopped green onions, and add a dollop of sour cream if desired. Optionally, sprinkle with fresh cilantro for extra flavor.
