To achieve the perfect topping, begin by crushing your preferred crackers into fine crumbs. You can use a food processor for a quick and even texture, or place them in a zip-top bag and crush them with a rolling pin for a more hands-on approach. Aim for a consistency similar to coarse sand, as this will help the topping adhere to the cheese and vegetables while providing a satisfying crunch.

Ingredients

2 cups fresh broccoli florets

2 cups fresh cauliflower florets

1 cup shredded cheddar cheese (plus extra for topping)

1 cup cream of mushroom soup (or homemade)

½ cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup crushed crackers (preferably buttery)

2 tablespoons melted butter

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

Prepare the Vegetables: In a large pot, bring water to a boil. Add the broccoli and cauliflower florets. Blanch them for about 3-4 minutes until slightly tender but still vibrant in color. Drain and set aside.

Mix the Cheesy Base: In a large mixing bowl, combine the shredded cheddar cheese, cream of mushroom soup, sour cream, garlic powder, onion powder, salt, and pepper. Stir until well combined.

Combine Vegetables and Cheese: Gently fold the blanched broccoli and cauliflower into the cheese mixture until all the vegetables are evenly coated.

Transfer to Baking Dish: Pour the mixture into a greased 9x13-inch casserole dish, spreading it out evenly.

Make the Topping: In a small bowl, mix the crushed crackers with melted butter. Stir until all the crumbs are coated in butter.

Add the Crunch: Sprinkle the buttery cracker mixture evenly over the top of the casserole. Finish with a handful of extra shredded cheddar cheese for that extra cheesy allure.

Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and bubbly.

Garnish and Serve: Remove from the oven, let it cool slightly, and garnish with chopped fresh parsley before serving.
